I love rice. Mixed vegetable fried rice is the dish I am drawn towards when I am struggling for ideas of what to cook, or when I'm trying to use up the veg in my fridge, or when I am looking for a quick and easy meal...basically whenever I am hungry! This fried rice dish is easy peasy to make and you can completely personalise it by adding the veg you like. Recipe (serves 3-4): 1 cup Basmati rice, cooked 2 cups vegetables of your choice (below is what I used) 1 medium carrot, diced 1 stick celery, diced 1 small onion, finely diced 2 cloves garlic, sliced 1 cup mushrooms, sliced 3 tbsp vegetable oil 1 - 2 tsp salt (or to taste) 1/4 tsp cayenne pepper (or to taste, alternatively use chopped fresh chillies) 1/4 tsp ground turmeric (hardar) Twist ground black pepper 2 tbsp chopped fenugreek (methi) Method:
