This fried rice dish is easy peasy to make and you can completely personalise it by adding the veg you like.
1 cup Basmati rice, cooked
2 cups vegetables of your choice (below is what I used)
1 medium carrot, diced
1 stick celery, diced
1 small onion, finely diced
2 cloves garlic, sliced
1 cup mushrooms, sliced
3 tbsp vegetable oil
1 - 2 tsp salt (or to taste)
1/4 tsp cayenne pepper (or to taste, alternatively use chopped fresh chillies)
1/4 tsp ground turmeric (hardar)
Twist ground black pepper
2 tbsp chopped fenugreek (methi)
Method:
- Heat the oil in a large frying pan on a high heat
- Add onions, garlic and mushrooms
Stir-fry for 2 minutes - Add remaining veg and stir-fry for 2 minutes
- Stir in the cooked rice and methi
- Add seasoning
- Reduce to a low heat and ensure that the rice is fully heated through
- Serve on it's own or as an accompaniment to a curry or kadhi
- You can add any vegetables you like. I just used the bits and pieces I had leftover in the fridge
- This dish is made with pre-cooked rice. You can also cook an all-in-one rice dish - I'll post the recipe up soon!
- This mixed vegetable fried rice is a meal on its own, but also works really well with dishes such as chilli paneer or Gujarati kadhi
